Slow Cooker Chicken Azteca

Prep time: 5 minutes

Cook time: 6-7 hours

Serves: 5-6

Ingredients:

  • 3-4 boneless, skinless chicken breasts (trimmed off fat)
  • 1/2 cup chicken broth
  • 1 cup salsa (no sugar added)
  • 1 can low sodium black beans, rinsed and drained
  • 2 cloves minced garlic
  • 1 tsp cumin
  • Optional: tortilla or lettuce to serve on

Directions:

  • Place chicken in the slow cooker
  • Top with remaining ingredients
  • Cover and cook over low for 6-7 hours
  • Serve by shredding chicken in slow cooker or remove chicken breasts and top with salsa mixture in the slow cooker

Eat like a champion!
