Egg Muffins

Prep time: 10 minutes

Cook time: 15-20 minutes

Serves: 1 dozen muffins

Ingredients:

  • 3 whole eggs
  • 3 egg whites
  • Veggies (onions, spinach, peppers), cut
  • Optional: bacon or ham cubes

Directions:

  • Preheat oven to 350
  • Mix 3 whole eggs and 3 eggs whites
  • In a greased muffin tin distribute chopped veggies
  • Pour egg mixture into muffin tin, about 3/4 full
  • Bake for 15-20 minutes at 350

Eat like a champion!
