Baked Peanut Butter Oatmeal with Apple

Prep time: 10 minutes

Cook time: 25-35 minutes

Serves: 2-4

Ingredients:

  • 1 cup (old-fashioned) rolled oats
  • 1 tablespoon turbinado (raw) sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 – 11/4 cups almond milk, plus more for serving
  • 1/4 – 1/3 cup peanut butter
  • 1 tablespoon non-hydrogenated plant-based butter, melted
  • 1/2 teaspoon vanilla extract
  • 1/4 cup dark chocolate, chopped (or dark chocolate chips)
  • 1/2 cup hazelnuts, chopped
  • 1 large apple, cored and sliced

Directions:

  • Preheat oven to 350 degrees F.
  • Combine oats, sugar, baking powder, salt, cinnamon and nutmeg in a casserole dish or a deep baking pan
  • Whisk milk, peanut butter, melted butter and vanilla in a small bowl
  • Pour milk mixture over the oats mixture and mix to combine
  • Add chocolate and hazelnuts, mix gently and decorate the top with apple slices
  • Bake for 25 – 35 until the top is nicely golden and the oatmeal has set
  • Remove from oven and let cool for a few minutes, serve warm with milk
