Almond Crusted Chicken Tenders

Prep time: 10 minutes

Cook time: 25 minutes

  • 1 cup raw, unsalted almonds
  • 2 chicken breasts
  • Extra virgin olive oil spray


  • Preheat oven to 400 degrees Fahrenheit
  • Place 1 cup of almonds in a food processor or blender, blend completely and move to a bowl
  • Slice chicken into tenders and spray each with olive oil spray
  • Dip each tender into the almond meal
  • Place on a baking sheet and bake for 25 minutes, or until brown on the outside
  • Optional: try with homemade bbq dipping sauce

Eat like a champion!
